WHERE MASCARPONE CAME FROM

Mascarpone cheese originated in the Lombardy region of northern Italy, a part of vast landscapes and rich agricultural resources. Our journey begins on a traditional, idyllic farm, often located in a quiet corner of the countryside. The cows and sheep are fed organic feed on the farm and enjoy the fresh air and sunshine. This good breeding environment allows the animals to produce excellent quality milk with higher fat and protein content in the milk, providing a superior raw material for the subsequent cheese making.

Traditionally, mascarpone cheese is made using fresh milk collected early in the morning. Once the high-quality milk is collected, it is immediately transported to a dairy plant for centrifugation to extract thin cream containing approximately 35% fat. This fresh cream is subjected to a high-temperature treatment and acidification process to create a delicate structure. This is the main difference between Mascarpone and other dairy products. Unlike the traditional method of curdling milk with enzymes, Mascarpone is made by adding citric acid at high temperatures (up to 90-95°C) to acidify and curdle the cream, followed by a 5-10 minute process. The precise control of time and temperature is essential for this step. Only at the right temperature and time can the citric acid combine perfectly with the thin cream to produce the delicate texture characteristic of Mascarpone.

At the end of the acidification process, the workers drain the milk to filter the excess whey and preserve the rich, creamy mascarpone cheese. This process gives the Mascarpone a wonderful texture that melts in your mouth and makes it unforgettable.
